Whenever I write down a recipe I find, I don't always write down where I got it. I'll do my best to give credit where it is due.

Lasagna

Knock-off Zachary's Pizza Tomato Sauce

2 T Olive Oil
1 Minced Garlic Clove
1 large can (28oz) of Crushed Tomatoes

about 1t Dried Oregano (I've been using a little less)
about 1t Dried Basil
Salt and Pepper to taste

Combine all ingredients in a saucepan. Bring to a boil, then lower to a simmer (with lid half way on) for about 30 minutes. (Sometimes I get lazy and just put all of the ingredients together in the morning and let them sit in the fridge all day - that way the flavors come together without having to simmer)

For the Lasagna

Put some sauce down then the first layer of lasagna noodles (I buy the ones where you don't have to boil them first). Add a layer of Cottage Cheese, then a layer of browned sweet Italian sausage, then a layer of sauce. Layer noodles, cottage cheese, meat, and sauce one more time. Top with some Mozzarella and Parmesan cheese. Bake for ??? (however long the lasagna package says).
