1 lb. Mild Italian Sausage, casings removed
1/2 large Onion, chopped
4 Cloves Garlic, minced
32 oz. Chicken broth
1 8oz. can Tomato Sauce
1/2 C. Grape Juice
1t. Oregano
8 oz. Penne Pasta
Water
3/4 lb. Baby Spinach (torn)
2 15oz. cans Cannellini Beans
Parmesan Cheese
Salt and Pepper
In soup pot brown sausage. Then add onion and garlic stirring often until onion is soft, about 5 minutes.
Add broth, tomato sauce, grape juice, oregano, pasta and 2 cups of water. Stir often and bring to a boil. Cook until pasta is tender.
Add spinach and beans and cook until spinach has shrunk. Add your desired amount of salt and pepper and serve w/ parmesan cheese.
