I make too many treats!!
1C Light Corn Syrup
1C Sugar
1C Peanut Butter
6C Rice Crispies
1C Semi Sweet Chocolate Chips
1C Butterscotch Chips
Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat right when it starts to boil or they will turn out too hard. Stir in peanut butter. Mix well. Add the rice crispies and stir until well coated. Press mixture into a cookie sheet coated with cooking spray. You want it to be a pretty thin layer. Set aside.
Melt chocolate and butterscotch chips together in microwave in 30 second increments, stirring after each 30 seconds until smooth. Spread evenly over cereal mixture leaving about an inch unfrosted on one of the long sides. Start rolling from the unfrosted side into a roll (like when you make cinnamon rolls). It's pretty tricky because it's more of a fold then shape process. You'll see what I mean when you try it. Let cool, then cut into disks.
