Layer 1 - Caramels
2 C White Sugar
1 1/2 C Corn Syrup
2 C Heavy Cream
1 C Butter (2 sticks)
1 t. Vanilla Extract
Butter a 9x13 pan
In a large pot (because it will overflow if you use a small one) combine the sugar, corn syrup, 1 C of the cream, and butter. Bring to a boil, stirring often so you don't burn the sugar. Once boiling, stir in the other 1 C of cream. Lower the heat to medium and simmer without stirring to 242 degrees F, or until a small amount of mixture dropped in cold water forms a firm but pliable ball. This should happen somewhere around 15 minutes - just make sure you watch that 15 minutes because you don't want the caramels to be too hard.
Remove from heat and add the vanilla then pour into prepared dish. Cool in the refrigerator.
Layer 2 - Peanut Butter
Once caramels are cool and set, spread with peanut butter. It can be smooth or crunchy and as thick or thin as you like.
Layer 3 - Pretzels
Cover the peanut butter layer with as many pretzels (I use the knot pretzels) as you can get on there and press them in as deep as you can get them so that the chocolate layer will be smooth.
Layer 4 - Chocolate
Melt chocolate chips in a microwave in 30 second increments. Stirring after each 30 seconds until smooth. You can add a tiny bit of butter so that the chocolate will not set in a solid form if you'd like. Pour the chocolate over the candy bars, spread it out and let set.
Once you are ready to eat them cut them into small pieces. They're pretty rich.
