The Best Granola Ever

I posted this on a yahoo group I'm in with the women of my ward, and I've had a whole bunch of people tell me that it really is the BEST granola ever. I like it because you can easily add what ever you want to it like coconut, dried fruit, etc.

1/3 C. Canola Oil
2 T. Water
1 t. Cinnamon
1/2 C. Pure Maple Syrup

4 C. Old-Fashioned Oats
1-2 C. Rice Crispies (your preference)
1 C. Wheat Germ
1/4 C. Flax Meal (or seeds you decide)
1/4 C. Brown Sugar
1/2 t. Salt
2/3 C. Chopped Almonds

Adjust oven racks to middle position. Preheat to 275. Coat two metal cookie sheets with cooking spray or oil and set aside.
Bring oil, water, cinnamon, and syrup to a simmer in a saucepan over low to medium heat.
Mix oats through almonds in a large bowl. Pour oil mixture over oat mixture and stir to thoroughly combine.
Pour mixture onto two prepared cookie sheets. Squeeze granola to form small clumps, working a handful at a time.
Bake for 30 minutes. Stir and continue to bake until golden brown - about 10 minutes.
Let cool. Granola can be stored in an airtight container for up to two weeks.

My favorite way to eat this (thanks Matt) is with berries, bananas, chopped apples or pears, vanilla yogurt, and a big dollup of peanut butter. (Don't miss out on the peanut butter - it may sound sketchy, but man...) It is my new Breakfast of choice and I feel deprived when I run out of this stuff.
