Whenever I write down a recipe I find, I don't always write down where I got it. I'll do my best to give credit where it is due.

Wow! (that's what Aive said) Chicken Salad Sandwiches

4 Chicken Breasts
1/2 Jar Apricot Jelly

1/2 Cucumber, peel removed
1 Plum, pit removed ;0)
1 Stalk Celery
Green Onion
Raisins (optional)
Almonds (optional)

Mayonnaise
Salt and Pepper

Cook chicken topped with apricot jelly at 350 for about 45 minutes. Let cool.

Combine all fruits and vegetables (except the raisins) in a food processor. Mix until salsa-like. Drain excess liquid through a strainer and put in a bowl.

When chicken is cool process in the food processor until fine!!ly chopped then add to vegetable mixture. Stir in the mayo, the salt and pepper, and the raisins. Chill until ready to eat.

Serve on some tasty bread.
