Mint Brownies

(I'm pretty sure everyone has this recipe somewhere, but they're the best I've had in a really long time. Perfectly gooey and minty and chocolaty)

Brownies
1 stick butter
2 cups sugar
4 eggs
1 cups flour
3/4 cups cocoa powder
1/2 tsp. salt
1 tsp. vanilla

Mix all ingredients. Pour in a 9x13. Cook at 350 for about 30 minutes.

Mint Buttercream Frosting
1 stick softened butter
1/2 t vanilla
1/4 c milk
1 T light corn syrup
2-3 C powdered sugar
1/4 t mint extract
green food coloring

Mix all together. When brownies are completely cooled, frost with this frosting.

Ganache Topping
12 oz. package of Chocolate Chips
8 oz. Heavy Whipping Cream

Heat the whipping cream (about 1:30 in microwave) then pour chocolate chips into hot cream. Wisk until smooth (or blend in a blender). When this mixture is about room temperature pour and spread over mint layer.

It's hard to wait until everything is set to eat these, but a little delayed gratification never hurt anyone. Especially with these. mmmmm
